Ingredients:
1/2 cup olive oil
2 tablespoons white wine vinegar
2 tablespoons orange juice
1 tablespoon Dijon mustard
Salt and Pepper to taste
Bibb lettuce
1 avocado – pitted, sliced
1/4 cup dried cranberries
2 tablespoons shaved Asiago or Parmesan cheese
Preparation:
Whisk oil, vinegar, orange juice, and mustard in small bowl to blend. Season with salt and pepper to taste.
Put lettuce in individual salad bowls. Arrange avocado slices and cranberries on top of the lettuce. Sprinkle with cheese and drizzle with dressing.
