Salad Ingredients:
2 heads of romaine
2 cups of chopped cooked chicken
1/4 cup thinly chopped red onion
1 cup cherry tomatoes, halved
1 cup cooked ditalini pasta (small tubular pasta)
Dressing Ingredients:
2 tablespoons Dijon mustard
2 tablespoons rice vinegar
2 tablespoons red wine vinegar
1 small garlic clove, minced
2 teaspoons honey
1 teaspoon dried oregano
Salt and Pepper to taste
Preparation:
Combine dressing ingredients. Shake vigorously. This dressing can be made in advance and will keep for up to a month.
