1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon salt
1/4 teaspoon pepper
2 pound beef round steak, 1 inch thick*
2 tablespoons vegetable oil
1 14 ounce can of tomatoes
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 teaspoon salt
1/4 teaspoon pepper
Stir together first three ingredients. Cut meat into 6 serving pieces. Dredge meat in the flour mixture to coat it.
Heat oil over medium high heat, brown meat on both sides, about 7 minutes per side. Cover tightly; simmer for one 1 hour. Add a small amount of water if needed.
Mix together the remaining ingredients; pour over the meat. Cover and simmer for 30 minutes or until tender. Serve with mash potatoes. Serves 6.
*If round steak is hard to find any moderately priced steak will work.
